How to make A tasty Kaiser Bread Rolls



You go to places and you are seeing this kind of Kaiser Rolls in every supper market and you are surprised how it is made. Today, in our bread recipe line, we will be looking at how to make this type of rolls.

One of the best part of this recipe is that you will require to make a preferment for it and I  bet it will be well worth it.

Day 1:  The Preferment. (20 Oz)

6 oz. unbleached all-purpose flour
6 oz. unbleached bread flour
¾ tsp. sea salt
½ tsp. instant yeast
7 oz. Water – Note that this water could be unsalted, spring or bottled water.

Direction:
Add flour and yeast together in a bowl, add water and keep stirring until a ball is formed, add salt and keep stirring until the flour is completed hydrated in the bowl. Stir the flours and the yeast together in a medium sized bowl. Add the water and stir with a large

Bring out and knead for 10 minutes with your hands. Stop when dough becomes smooth but not sticky.
Roll the bowl with oil or margarine and then keep the dough there for about two hours to rise. Remove it from the bowl afterward and knead a little to remove gas and then return it to the bowl and cover tightly and place in the refrigerator overnight.

Day 2 and Baking Day:

Bring out the ferment from the refrigerator and cut 9 ounce into ten pieces and then cover with plastic wrap to rest for one hour ready to make your dough.

Add the following
9 oz. of your ferment
10 oz. unbleached bread flour
¾ tsp. salt
1 tsp. malt powder
1 tsp. instant yeast
1 large egg (slightly beaten)
1 ½ Tbsp. olive oil
6 oz. water

Add ingredients together and knead and then oil your bowl and keep there for about 2 hours to ferment until the dough has risen to double.

Turn the dough out onto a lightly floured counter. Use your dough knife to divide the dough into 9
equal pieces at about 2 ½ ounces each. If you prefer larger rolls, divide into 6 equal pieces at
about 4 ounces each.

Shaping and Forming

Form them into stick shapes or rolls and then place in baking pan to rise for about an hour until they rise double of original size

Baking
You could spray your oven with water spray and then add the risen dough and allow to bake for 45 minutes until golden brown
