One perfect equipment you will need if you are going to run a professional commercial bread bakery is a mixer.

However, many people will either buy the wrong mixer or buy the right one with the wrong specifications. Let me explain: NOT ALL MIXERS ARE FOR BREAD MAKING.

Bread baking is science and many people are not getting it right because they either do not obey that science or are not knowledgeable about it. 

You bread will come out hard, crumbly, not chewy, not elastic, spoil very fast, smelling like alcohol or is collapsing and falling inside primarily because of your mixing process.

Those who go to buy equipments without knowing or having knowledge about a perfect or professional bread mixer would have gone to buy single  speed mixers which will also not give you that commercial Professional mixing.

You need DOUBLE SPEED, SINGLE PHASE OR DOUBLE PHASE MIXERS as minimum. 


Spiral mixers comes with slow and fast speed. Spiral mixers functions in both Mixing (slow), and Fast(Milling) in order for you to have a smooth, stretchy, dough with structure. 


Spiral mixer will mix and mill your dough and get it ready under 20 minutes. Anything more than this will result in destroying the gluten content in your dough and your dough will start sagging.


NOTE: There are spiral mixers with superior Timing Chain and Dough Hook. Quality of mixer will determine its durability. While some go for cheap mixers which could have inferior rimming chain and dough hook, others go for durability, quality hook and timing chains. The choice is yours.
